banana nut muffins!

who doesn't love banana bread/muffins ? please tell me, because i firmly believe that you can't NOT love it. especially hot. especially with butter. (now please tell me who doesn't love butter... i will tell you they are lying. you cannot convince me otherwise.)

so when we decided to have a breakfast themed dinner for the camp's interns, i knew we HAD to have banana bread.

lets back up a second. my mom makes THE best banana bread. ever. and so when my friend tamara gave me a banana bread recipe, i was like... i'm sure this is good, but no one can beat momma beassie. so i left the recipe card attached to our bulletin and didn't really think about it. but when it came to make these muffins, i decided, why not? i'll give this recipe a try.

i was an idiot.

mom's banana bread is definitely a favorite, but THIS recipe?!!? it is utterly obnoxious how good it is. can bread even be creamy? because this one is. and rich. and luxurious. (too much?) just melts in your mouth... and i can't believe i'm saying this, but NO need for butter! butter always makes it extra good and extra fatty.... but there is not even a desire for it with these thangs.

i stand corrected. mom, i'll give you the recipe.

i did make a few slight adjustments to the recipe, but the majority of it came from the newly married tamara mcguire:

Banana Nut Muffins
1 stick salted butter
1 c. sugar
2 eggs
1 1/2 c. flour
1 tsp salt
1 tsp baking soda
1 tsp vanilla
1/2 c. sour cream
1 c. mashed bananas (about 2)
2 oz. chopped walnuts
1-2 oz. chopped pecans

Preheat oven to 350 degrees. Cream together sugar and butter. Add eggs and mix until combined. Add flour, salt, and baking soda. Add sour cream, vanilla, and bananas. Mix. Pour into muffin pan (fill each muffin 3/4 way full). Bake 30ish minutes.... until golden brown.

and then i would also add a crumble to the recipe. google them. that is the one thing that made my mom's the best! she discovered the secret to making sweet breads, a sweet streusel topping!

Oh, good! I love banana bread and banana muffins and banana anything. Not sure if my guy will be down with the sour cream, but maybe I'll make these anyway and make him into a believer. :)
