i'm revamping! i like decorating the blog better than blogging sometimes... same with playing barbies.
so yesterday was the dreaded day. the day i committed to sharing my weight lost (or retained) for the week. sorry i did not post. i was at bible study and blah, blah, excuse, excuse, blah... i didn't get around to posting.
so. the loss for the past week was.... 3.1 lbs!
i'm sure i gained it all back. the past two days i've been eating like a starving child. however!!!! i am back on track. {starting tomorrow}
i've also decided that i want to make a goal for each week. (mainly so that i don't feel bad if i didn't lose weight that week. at least i will have been able to complete something else faithfully)
GOAL for next week: work out 4 times.
but. its where i'm at.
on a non health related note... have you ever answered the phone with a friendly quirky greeting only to find that the caller is not who you thought they were. yeah? me too! today my boss called me from another person's phone. i answered with a professional, cordial "WASSUP, GANGSTA?"
yeah...
anywho... here is the recipe i promised. adapted from hershey's.
Moist Cream Cheese Swirl Brownies
Ingredients for Cream Cheese Swirl
3 ounces cream cheese, room temperature
2 tablespoons (1/4 stick) unsalted butter, room temperature
1/4 cup sugar
1 large egg
1 tablespoon all purpose flour
2 tablespoons (1/4 stick) unsalted butter, room temperature
1/4 cup sugar
1 large egg
1 tablespoon all purpose flour
Ingredients for Brownies
1 cup (2 sticks) butter or margarine, melted
2 cups sugar
2 teaspoons vanilla extract
4 eggs
1 cup all-purpose flour
2/3 cup HERSHEY'S Cocoa
1/2 teaspoon baking powder
1/2 teaspoon salt
Preheat oven to 350 degrees.
Cream Cheese Mixture:
Beat cream cheese and two tablespoons butter in medium bowl until light and fluffy. Gradually add 1/4 cup sugar and beat until well blended. Beat in egg. Mix in one tablespoon flour. Set mixture aside.
Brownie Mixture:
Stir together butter, sugar and vanilla in bowl. Add eggs; beat well with spoon. Stir together flour, cocoa, baking powder and salt; gradually add to egg mixture, beating until well blended.
Spray Pam into a glass or light colored metal pan 9x13x2 pan.
Pour the half of the brownie mixture into the pan and smooth the top with your spatula.
Dollop half of the cream cheese mixture on top of the brownie batter. Make sure that you space the dollops evenly around the pan. Use a butter knife to then swirl the cream cheese into the mixture. Don't over do this step because then you will not see the swirls. Just do it enough to distribute the cream cheese swirl throughout the brownie mixture.
Add the rest of the brownie mixture over the top and carefully spread it out. Then add the remaining cream cheese swirl mixture and gently swirl it around.
Dollop half of the cream cheese mixture on top of the brownie batter. Make sure that you space the dollops evenly around the pan. Use a butter knife to then swirl the cream cheese into the mixture. Don't over do this step because then you will not see the swirls. Just do it enough to distribute the cream cheese swirl throughout the brownie mixture.
Add the rest of the brownie mixture over the top and carefully spread it out. Then add the remaining cream cheese swirl mixture and gently swirl it around.
Bake the brownies for 30 minutes (rotate the pan half-way through baking) and check to make sure the brownies are completely done by sticking a toothpick into the center of the pan. The brownies are done when the toothpick comes out with a few moist crumbs.
Cool, cut, and serve!
